Well, my husband just made a HUGE batch of these to freeze and they are soooooooo good I could eat 12 but I have learned my lesson from too much yummy coleslaw in one day–as in too much of a good thing can make your stomach hurt a lot!
We also used some of our eggplant and zuch’s to mix in with some local, free range ground beef to make meatballs to keep in the freezer to serve with sauce from other organic stuff from Joan!

So, speaking of Zuch’s, I just made a great zucchini boat.
1/2 the zucchini length wise
scoop out the flesh. Chop flesh up.
melt butter, brush melted butter on the halves, broil until lightly browned.
in the pan with melted butter, saute a small chopped onion and jalepeno pepper.
Add the chopped zucchini once onion is translucent.
Set aside to cool. Then add to mixture chopped cilantro (2Tbsp-1/2 c), and
shredded cheddar cheese(1/2C-3/4C).
Put mixture in the boats and broil. Yummy. My husband said it was one of the best
things I’ve made lately!
Oh and the watermelon… so tasty!
